ANNABEL’S MINI TURKEY BALLS

Kids and adults alike will love my tasty mini Turkey Balls. These festive finger foods are fantastic for the whole family and packed with goodness for growing baby.

MAKES: 25 TURKEY BALLS

Suitable from 6 months

 

Ingredients

2 tsp sunflower oil

1 onion chopped

75g parsnip, peeled

1 sweet potato (roughly 150-200g)

200g minced turkey thigh

30g fresh spinach

20g grated Cheddar cheese

1 tsp fresh thyme, chopped 

30g Panko breadcrumbs

 

Method

  • Prick the sweet potato and cook in a microwave for 10 minutes until soft. Leave to cool. Scoop out the potato. Grate the parsnip.
  • Measure all of the ingredients into a food processor. Whiz until finely chopped. Season (for babies over 1 year) and shape into 25 balls.
  • Heat the oil in a frying pan.  Fry for 8 to 10 minutes, turning until golden and cooked through.
  • Alternatively preheat an oven to 180C / 160C Fan and cook the balls for about 15 minutes turning halfway through until cooked through.

 

ANNABEL’S FESTIVE FRENCH TOAST

This makes for a deliciously festive Christmas morning breakfast! Layer up the eggy bread into a Christmas tree shape and sprinkle with icing sugar and berry baubles for bonus festivity points!

Annabel Karmel's Festive French Toast

Suitable from 12 months

Ingredients

1 egg

1 slice raisin bread, cut into 3 fingers

A knob of butter or splash of sunflower oil

Blueberries and raspberries

 

Method

  • Crack the egg into a shallow bowl and beat with a fork.
  • Dip the raisin bread into the egg so that it is completely coated. Leave to soak until the egg has been absorbed.
  • Meanwhile, melt the butter or sunflower oil in a frying pan over a medium heat. Add the French toast to the pan and fry for 2 minutes on each side until golden.
  • For a special Christmas treat, cook up multiple slices of eggy bread and arrange in the shape of a tree. Decorate with blueberry baubles and top with a raspberry star for a really festive feast.
